Air Fryer Brussel Sprouts

Brussel sprouts were probably not your first choice at the dinner table, likely the dinosaur nuggets or mashed potatoes made the list.. But, now you're an adult and you don’t mind the odd green vegetable or you have come to terms that they are good for your health. Brussel sprouts are still getting a bad rep, I’m not sure if it is their bitter, sharp aftertaste or you may have PTSD from your parents making you eat them.  Don’t worry! This is where I come in! If you didn’t like brussel sprouts, try this air fryer rendition with chopped pancetta, parmesan cheese and crispy fried leaves. If you have not joined the air fryer club yet, you can certainly roast the brussels and still get close to the same taste. 

So what is all in this recipe to make these little antioxidant, protein packed green brains taste so good? See below!

Ingredients: 

1 medium sized bag of brussel sprouts chopped in halves or quarters. 

½ cup chopped pancetta 

½ cup shredded parmesan cheese 

¼ cup melted duck or bacon fat 

1 tsp of pepper 

Instructions:

  1. Cut up your pancetta or bacon into small bits and fry until crispy. Set aside.

  2. Shred parmesan cheese and set aside.

  3. Wash and chop your brussel sprouts either in halves of quarters and place in a medium bowl. 

  4. Season with pepper (pancetta is already salty so you don’t want to season with salt).

  5. Drizzle melted duck or bacon fat over top the brussels and toss.

  6. Place in your air fryer at 375 degrees for 15 min. If roasting in the oven, lay brussel sprouts on a baking pan with parchment paper and roast at 375 degrees for 30-45 min. 

  7. Once all toasted up, transfer to another bowl and sprinkle with pancetta and shredded parmesan cheese!
