Roasted Tomato Soup
What better way to warm you up on a cold winter evening than a classic bowl of tomato soup (note: grilled cheese sandwich for dipping is optional but strongly encouraged of course!). This is a good way to use up leftover tomatoes, and serves as an inexpensive dinner with little effort required on those nights where you’re too tired to put together a larger meal. What separates this tomato soup from others (aside from it’s taste) is that it’s easily made to meet dietary restrictions by replacing cow’s milk with coconut milk, and replacing regular flour with gluten free rice flour. It goes without saying that tomato soup is good for the soul, but if you need further convincing, tomatoes provide anti-inflammatory properties and boost your heart and brain health!

Ingredients
3 cups of cherry tomatoes or 5 whole tomatoes, sliced in half
2 tbsp of herbs of providence
¼ cup of olive oil
2 shallots, chopped
2 tbsp of minced garlic
1 cup of coconut milk (or whole milk)
2 cups of vegetable (or chicken) broth
1 small can of tomato paste
¼ cup rice flour (or regular flour)
2 tbsp of fresh (or dried) basil
Salt and pepper to taste
Directions:
Step 1: Preheat your oven to 375 degrees. On a baking sheet lined with parchment paper, spread your cherry tomatoes or sliced whole tomatoes. Add in the chopped shallots and sprinkle your minced garlic, herbs of providence, and salt and pepper. Lastly, drizzle your olive oil over top and roast for 45 min.
Step 2: Once your tomatoes are roasted. Heat your broth and tomato paste in a medium sized pot. Dissolve your flour into the milk then add it to the broth mixture.
Step 3: Add your roasted tomato mixture to the pot and bring to a boil. Once at a boil, reduce heat to low.
Step 4: Add your basil and use an immersion blender to puree the soup. If you don’t have an immersion blender, add the mixture to a regular blender and puree. Add more salt and pepper as required.
Step 5: Top with croutons, crackers, or herbs such as basil or parsley - or track down the aforementioned grilled cheese sandwich!
