Honey Lavendar Lemonade
With the second straight pandemic summer on the horizon, I’m sure everyone is scouring the internet for a nice cold drink recipe. And I totally get you. So to help you quench your thirst (and understanding that not everyone can have alcohol - looking at you, kids and preggos) I’m going to meet you halfway with a lemonade recipe - alcohol can be added on your own, you don’t need me for that. Heck, add whatever you want! Life has certainly given us some lemons in the last year, so it’s time to seek out some lavender to make this lemonade! This recipe has fewer preservatives than the lemonades that you buy in the store as a powder or frozen beverage, and I can personally confirm that this is perfect for working outside in the garden or next to the BBQ.
Ingredients:
Lavender simple syrup:
1 cup of water
¾ cup of honey
¼ cup of dried lavender
1 tsp of lavender extract
Lemonade:
1 & ½ cups of fresh pressed lemon juice (about 7-8 lemons)
4 cups of water
¾ cup of lavender simple syrup (above)
Instructions:
To make your simple syrup, bring water, honey, and dried lavender to a boil in a small saucepan. Once boiling, reduce heat to a simmer for 5-7 min. Pour into a heat-safe container and add your lavender extract. Let the mixture set in the fridge while you start on the lemon juice.
Cut and squeeze all the lemons until you have 1 and ½ cups. If you like a less-tart lemonade, start with cup 1 cup of lemon juice.
Add your water and then simple syrup, making sure to strain the dried lavender from your syrup. You can always add sweetness, so I suggest starting with ½ cup of syrup then add more if you want it sweeter.
Refrigerate for 45 min to 1hr. Serve with a sprig of lavender, lemon slice, and ice!
