Gluten-Free Dairy-Free Waffles

I’ve got to admit, I’m not a very good morning person. There aren’t too many memes about not being a morning person that don’t get sent my way by friends and coworkers, so apparently it doesn’t go unnoticed. But I also like to eat good food, so you’d think I’d be stuck with quite the paradox. Luckily, this is a simple blender recipe where you can throw ingredients into a blender, press a button, and be the family hero with enough waffles to feed the whole family! Not sold yet? What if I told you this is gluten and dairy free as well? ...Based on the title, this shouldn’t be a riveting discovery. At the very least, this is a quick morning meal that is healthier than a pre-made waffle mix from the store!

Prep time: 10 min Total time: 30 min Servings: 2-3 

Ingredients: 

1 ½ cups of gluten free oats*

1 cup of milk of your choice (almond or coconut milk work best) 

1 ripe banana 

2 eggs

1 tsp of cinnamon 

1 tsp of vanilla extract 

1 tsp of baking powder 

1 tbsp of coconut or regular sugar 

*want to add some extra protein? Sub ¼ cup protein powder for the ½ cup of oats and only use 1 cup of oats instead. 

Instructions:

Step 1: Preheat your waffle iron. 

Step 2: Place all ingredients in a high powered blender and mix until smooth*. 

Step 3: Follow your waffle iron directions to ensure that you pour enough mixture into the machine. Voila!

*Between waffles the oats will dry up some of the liquid. Add some water or extra milk and to a quick blend before pouring the mixture the second time.
