(GF) Peanut Butter Oatmeal Chocolate Chip Cookies

Ingredients: 


½ cup of butter or coconut oil 

1 cup of peanut butter

2 eggs

2 tsp of vanilla

¾ cup of coconut sugar (or regular) 

3 cups of GF oats 

1 ¼ tsp of baking soda

½ tsp of salt 

¾ cup of chocolate chips 

1 tbsp of flakey sea salt to sprinkle after


Instructions: 

  1. Preheat oven to 350 degrees 

  2. Combine butter (or coconut oil), peanut butter, and sugar into a bowl. With an electric mixer, beat until fluffy.

  3. Add in eggs one at a time and vanilla until combined.

  4. Stir in oats, baking soda, chocolate chips and salt.


*Feel free to replace chocolate chips with raisins or nuts or omit to bring down the sweetness

*For a smoother batter, food processor oats into more a flour then the whole oat
