Corn Zucchini Fritters

Ingredients:

2-3 medium sized zucchini

1 cup grilled corn

3/4-1 cup of flour of choice (I used Bob’s red mill GF flour blend)

2 tbs of fresh chopped parsley

2 eggs (or chia egg (1 Tbsp of chia seeds in 2 Tbsp of water

Juice and zest of one lemon

1 tbsp of baking power

1 tsp of sea salt

1 liter of oil (I used canola but you could do avocado as it has a high smoking point)

Additions: 2 tbsp of chopped Dill and half chopped Jalapeño

Directions:

Step 1: Grate your zucchini and place in paper towel. Squeeze out the excess water and place in a medium sized bowl.

Step 2: Add in your grilled corn, flour, eggs, baking powder, sea salt, lemon juice, lemon zest, herbs. Mix to combine.

Step 3: In a deep dish pan heat your oil unti it starts to crackle or produce little bubbles. If using a deep fryer, heat your oil according to the instructions.

Step 4: Form your zucchini batter into a 2 inch ball. Next, place in hot oil. Once the ball is brown on all sides, remove and set aside onto a plate with paper towel to soak up excess oil. Sprinkle some extra sea salt on top while warm.

Step 5: Top with more fresh dill, parsley and serve with my favourite dill dip!
