Chocolate Peppermint crinkle cookie

I know, I’ve been quiet on the recipe front… but what better way to come back from a brief hiatus than with a Christmas cookie series! If your household is anything like mine, Christmas season is synonymous with cookie season. It just simply would not be Christmas without an abundance of cookie recipes getting pulled from the shelf. So, to kick off my Christmas cookie series, I want to start with an absolute staple in our house, a Crinkle! This is one of the first ones I like to make because it's a confidence booster and motivates me for the avalanche of cookies to follow - it's not hard to accomplish the crinkle, and the icing sugar does all the work for you. Well, except the eating part, but I’ve got some pretty capable friends to fill that void!



Ingredients: 


¼ cup softened butter 

2 cups of sugar (I use coconut sugar)

3 eggs

1 ½ teaspoons of peppermint extract 

½ cup of melted chocolate 

2 ½ cups of flour 

¼ cup of cocoa powder

½ tsp of salt

2 tsp of baking powder 


Icing sugar for rolling 


Instructions:

  1. Pre-heat oven to 350 degrees

  2. Sift all your dry ingredients together; flour, cocoa powder, baking powder, and salt. Set aside

  3. In your stand mixer, cream butter and sugar together. Beat in eggs one at a time. Add in melted chocolate and peppermint extract until fully mixed 

  4. Add in your dry ingredients slowly until fully incorporated and your dough forms

  5. Roll into 1 inch balls and then dump and cover with icing sugar

  6. Place on your baking sheet with parchment paper and bake for 8-10 min

TIP: when the cookies crinkle, give it one more minute before pulling it out of the oven. This will ensure the middles are chewy!
